\u003cp\u003eThe Falling Rock Executive Chef Responsible for monitoring and ensuring that company systems and standard operating procedures are met for Falling Rock, Aqueous, Amber Bar and Sunset Terrace(seasonal). Primary responsibilities are overseeing all aspects of Menu Development, Recipe Development, Training and execution of all aspects of the Culinary Operations at Falling Rock. The Executive Chef has the human resource, financial and administrative responsibilities as they pertain to his/her direct reports. In addition, s/he is also responsible for working closely with Resort Executive chef and Executive Sous Chef to assure standards are being met in all other aspects Falling Rock. Must work closely with Executive chef and Executive Sous Chef in promoting company\u0027s culture, mission, and philosophy.\u003c/p\u003e

\u003cp\u003eResponsible for all things Culinary in a 5 Star 5 Diamond Boutique Hotel, including breakfast, lunch dinner, room service and Sunset Terrace(seasonal pool deck) Development of Seasonally driven menus, focusing on local ingredients.\u0026nbsp; Accountable for meeting budgeted items, such as food cost, labor cost and direct operating expenses. Weekly meetings justifying current labor and food cost vs. budgeted labor and food cost. Hold daily line ups with both BOH and FOH staff Training of Culinarians as well as service staff with implementation of menu changes. Work hand in hand with Falling Rock Manager in regards to food training for Butler staff as well as concierge Daily ordering as well as end of month inventory Hiring and training of Culinary Staff.\u003c/p\u003e

\u003cp\u003eThree years senior level or executive chef experience in high-quality, volume-oriented environment. AOS Culinary School graduate or related training. Passionate culinarian with great palette and sense of presentation. Ability to handle multiple tasks and work well in environment with time constraints. Ability to troubleshoot effectively.\u003c/p\u003e

Company Profile:
In 1968, Pittsburgh industrialist Willard F. Rockwell (Rockwell International) established a private game reserve in the Laurel Highlands on what is now Nemacolin Woodlands Resort. This property was named Nemacolin Trails Hunting Reserve. The Rockwell’s invited friends and business associates to hunt and fish the 400-acre reserve, populated by silver fox, bear and white-tailed deer. A hunting lodge was constructed in 1968, together with the golf course and airstrip. Lakes Louise and Carol were also added, and Beaver Creek was developed into the excellent trout stream it is today.
